- يختلف الطهي في الهواء الطلق اختلافًا كبيرًا عن الطبخ الذي مقرّه المطبخ، وأبرز اختلاف هو إنعدام وجود رقعة مطبخ سهلة التحديد. ترتّب على هذا أن طوّر المعسكرون والرحالة مجموعة كبيرة من التقنيات والمعدات المتخصصة لإعداد الطعام في البيئات الخارجية. ارتبطت هذه التقنيات تقليديًا بالثقافات البدوية مثل البربر في شمال إفريقيا، والبدو العرب، وهنود السهول، والرواد في أمريكا الشمالية، والقبائل الأصلية في أمريكا الجنوبية. وقد جرى صقل هذه الأساليب في العصر الحديث لاستعمالها أثناء الأنشطة الترفيهية الخارجية. في الوقت الراهن، يتم تنفيذ الكثير من أعمال إدامة تقاليد الطهي في الهواء الطلق وتطويرها في البلدان الغربية بواسطة حركة الكشافة ومعلمي البراري مثل المدرسة الوطنية للقيادة الخارجية وشبكة المغامرات الخارجية (Outward Bound)، بالإضافة إلى الكتّاب والطهاة المرتبطين ارتباطًا وثيقًا بالمجتمع الخارجي. - Outdoor cooking is the preparation of food in the outdoors. A significant body of techniques and specialized equipment exists for it, traditionally associated with nomadic cultures such as the Berbers of North Africa, the Arab Bedouins, the Plains Indians, pioneers in North America, and indigenous tribes in South America. These methods have been refined in modern times for use during recreational outdoors pursuits, by campers and backpackers. Currently, much of the work of maintaining and developing outdoor cooking traditions in Westernized countries is done by the Scouting movement and by wilderness educators such as the National Outdoor Leadership School and Outward Bound, as well as by writers and cooks closely associated with the outdoors community.
