A diferencia de las enchiladas, los chilaquiles se elaboran con totopos, es decir, fragmentos de tortilla (usualmente de forma triangular) fritos hasta obtener una textura crujiente. Estos totopos se elaboran con anticipación, para disponerlos en la salsa picante en el último momento y que lleguen a la mesa todavía con cierta firmeza, de tal forma que sea posible cogerlos con facilidad con un tenedor.
