Nadat ze bij de Paralympische Zomerspelen 2004 in Athene 5 gouden medailles won in het zwembad, kwalificeerde Du Toit zich via de Wereldkampioenschappen open water 2008 in Sevilla met een vierde plaats voor de 10 kilometer openwaterzwemmen bij Olympische Spelen van Peking. She was one of two Paralympians to compete at the 2008 Summer Olympics in Beijing; the other being table tennis player Natalia Partyka. Du Toit became the third amputee ever to qualify for the Olympics, where she placed 16th in the 10K, "Marathon", swim.
