- Sohan o Sowhan es un pastel tradicional iraní de azafrán o de caramelo. Se produce principalmente en las ciudades de Qom y Isfahán. Sus ingredientes consisten en trigo, harina, yemas de huevo, agua de rosas, azúcar, mantequilla o aceite vegetal, azafrán, cardamomo y astillas de almendras y pistacho. En Isfahán, se le agrega miel al Sohan de sustituto al azúcar produciendo un caramelo más frágil que también tiene un acabado brillante. Los peregrinos y viajeros de la ciudad santa de Qom lo compran y lo llevan a sus ciudades como un regalo que se conoce como el Regalo de Qom. Shoan ha sido producido comercialmente por los confiteros tradicionales desde hace décadas. Se hace generalmente en discos delgados de 5-6 milímetros de espesor, o como piezas cuadradas en tamaños pequeños. Son envasados generalmente en botellas de hojalata de intrincado diseño.
