Georg Friedrich Karl Heinrich Bidder (9 November [O.S. 28 October] 1810 – 27 August [O.S. 15] 1894) was a Baltic German physiologist and anatomist from what was then the Governorate of Livonia in the Russian Empire. Bidder's name is associated with two anatomical structures: * "Bidder's ganglia": Ganglia located at the lower end of the atrial septum; sometimes called the ventricular ganglia. * "Bidder's organ": A spherical, brownish reproductive organ of male toads.

W 1842 roku otrzymał katedrę anatomii na Uniwersytecie w Dorpacie, a od 1843 roku wykładał także fizjologię. Był członkiem korespondentem (1857) i członkiem honorowym (1884) Petersburskiej Akademii Nauk. Synami Friedricha Biddera byli (1839–1902), ginekolog, i (1844–1905), również lekarz.

Bidder blev 1834 extra ordinarie professor i Dorpat, 1842 professor i anatomi samt 1843 i fysiologi och patologi. Åren 1857–1864 var han universitetets rektor. År 1869 fick han avsked som emeritus. Bidder utövade som vetenskaplig forskare, lärare och rektor en mycket betydelsefull verksamhet. På hans initiativ och under hans omedelbara ledning utgavs inte mindre än 77 doktorsavhandlingar. Hans namn är först och främst knutet till banbrytande arbeten över matsmältningens och ämnesomsättningens fysiologi, som han utgav tillsammans med sin elev Carl Schmidt, men han publicerade för övrigt dels ensam, dels tillsammans med lärjungar en rad
