This region is collectively known as the "Roquefort Sector" which references the milk collection area. The Lacaune is the most widely used dairying sheep breed in France, with a population of about 800,000 ewes. Notably, it is the predominant breed used in the production of Roquefort cheese in France. La Lacaune lait est exploitée principalement dans le rayon de Roquefort pour la production laitière surtout destinée à la transformation fromagère sous cette appellation d'origine, ses agneaux, sous-produits de l'activité laitière sont engraissés après sevrage pour la production d'agneaux destinés à la boucherie. La Lacaune viande, bête à viande, est exploitée dans une zone géographique plus étendue, en système allaitant strict pour la production principale d'agneaux de boucherie engraissés sous la mère.
