C'est également vers le milieu du XIXe siècle, alors que l'économie locale est fragilisée, que des artistes, peintres ou dessinateurs, viennent à Candes pour en reproduire les paysages. Fondée par Martin de Tours à la frontière occidentale de son diocèse dans le dernier quart du IVe siècle, Candes est l'une des premières paroisses tourangelles. Saint Martin meurt à Candes le 8 novembre 397, ce qui assoit la notoriété de cette petite paroisse où s'élève, au Moyen Âge, une collégiale célèbre par la richesse de son décor sculpté. L'étude de sa chronologie, de son architecture et de son décor, particulièrement complexe, est toujours en cours ; l'édifice est protégé au titre des monuments historiques dès 1840. Le village, lieu de pèlerinage, reçoit dès le IXe siècle la visite régulière des rois de France, alors que ses châteaux successifs, également protégés au titre des monuments historiques, sont une résidence d'été pour les archevêques de Tours. Plusieurs demeures médiévales et Renaissance ainsi qu'un ancien moulin à vent complètent l'inventaire des édifices remarquables de la commune. La richesse et la diversité du patrimoine naturel de Candes-Saint-Martin, dues principalement à la présence de la vallée de la Loire (patrimoine mondial de l'humanité reconnu par l'Organisation des Nations unies pour l'éducation, la science et la culture) et de la confluence du fleuve et de la Vienne, font que le territoire communal est intégré à trois sites du réseau Natura 2000 et trois zones naturelles d'intérêt écologique, faunistique et floristique. Au XXIe siècle, Candes-Saint-Martin cherche à mettre à profit ce patrimoine naturel et les paysages du confluent, mais également l'histoire et le patrimoine bâti religieux du village. La commune est ainsi membre de l'association « Les Plus Beaux Villages de France » et concourt à l'édition 2016 de l'émission de télévision française Le Village préféré des Français.
