Jacob Gillig (also spelled Jakob or Gellig; ca. 1636 – 24 July 1701) was a Dutch Golden Age painter of still lifes, usually of fish. Although he produced several portraits, it is for painting fish that he is best known. Gillig was born and died in Utrecht. He apparently did not begin painting until his twenties, never registered as a master with the Utrecht Guild of Painters, and worked a merchant and then as a prison warden. In Utrecht the city prison was next to the fish market.

Hij vervaardigde enkele portretten, maar werd vooral vermaard door zijn visstillevens. Volgens Arnold Houbraken was hij niet zeer bedreven in de portretkunst, zoals hij vermeldt in een komische anekdote in zijn werk De groote schouburgh der Nederlantsche konstschilders en schilderessen. According to Houbraken, he tried his hand at portrait painting, but his likenesses were not very like his subjects. His works, as in the example to the right, favored pyramidal compositions. These were much respected in Utrecht at the time, and several of his works were copied by Abraham Mignon. (en)

Gillig (of Gellig) was van oorsprong koopman en werd later ook gevangenbewaarder. Op 25-jarige leeftijd trouwde hij met Hester Willaerts, een dochter van de marineschilder Adam Willaerts. Daarmee werd hij ook de zwager van Abraham Willaerts en diens schilderende broers Cornelis en Isaac. Hij raakte daardoor in de ban van de schilderkunst en ontwikkelde zich tot een bekwaam weergever van dode riviervissen zoals die op de markt in Utrecht werden aangeboden. Vaak worden de vissen in een piramidale vorm afgebeeld. Gillig overleed in Utrecht op 24 juli 1701. (nl)
