Il est cultivé pour l'ornement et la consommation. Devenu assez rare et ayant disparu d'une partie de son aire naturelle de répartition, le chou marin est une espèce protégée dans plusieurs départements français. - Zeekool (Crambe maritima) is een zoutminnende vaste plant die vooral in Europa langs de kustlijn voorkomt en eetbaar is. Het is een relatief nieuwe groente voor Nederland. In omringende landen wordt het al beschreven als eetbaar sinds half 18e eeuw. Zeekool gedijt goed op zilte grond. In Nederland wordt het in de winter via twee groothandels verkocht, of kan het in het wild langs de Afsluitdijk of op de Waddeneilanden worden gevonden. Op Texel wordt het ook verbouwd. De stengels of stammen van de plant kunnen worden gegeten, en hebben een lichte koolsmaak. Hiertoe worden de stengels geblancheerd, of in plakjes geroerbakt. Ook is de stengel rauw te consumeren. De plant heeft grote, groene bladeren, die echter niet eetbaar zijn. Wel kunnen de jonge scheuten, al dan niet geblancheerd, worden gegeten. (nl)
