Amino acids are organic compounds that contain both amino and carboxylic acid functional groups. Although hundreds of amino acids exist in nature, by far the most important are the alpha-amino acids, which comprise proteins. Only 22 alpha amino acids appear in the genetic code.

  • Els aminoàcids són compostos orgànics que contenen els grups funcionals amino (-NH₂) i carboxil (-COOH), així com una cadena lateral diferent en cada aminoàcid. Els elements presents en tots els aminoàcids són el carboni (C), l'hidrogen (H), l'oxigen (O) i el nitrogen (N), mentre que el sofre (S) forma part de les cadenes laterals de la cisteïna i la metionina i el seleni (Se) es troba en la selenocisteïna, un aminoàcid més rar. Es coneixen uns 500 aminoàcids, els quals podem classificar per la situació del grup amino com a alpha- (α-), beta- (β-), gamma- (γ-) o delta- (δ-) aminoàcids; també es poden classificar per polaritat, pH, i tipus de cadena lateral (alifàtica, , aromàtica, amb hidroxils o sofres, etc.). Formant proteïnes, els aminoàcids són el segon component més abundant (l'aigua n'és el primer) en els músculs i altres teixits. Un alfa aminoàcid té la fórmula química genèrica: H₂NCHRCOOH, on R és un substituent orgànic. El grup amino està enllaçat a l'àtom de carboni immediatament adjacent al grup carboxil (α-carboni).
