Louis Hébert (c. 1575 – 25 January 1627) is widely considered the first European apothecary in the region that would later become Canada, as well as the first European to farm in said region. He was born around 1575 at 129 de la rue Saint-Honoré in Paris to Nicolas Hébert and Jacqueline Pajot. He married Marie Rollet on 19 February 1601 at the Church of Saint-Sulpice, Paris. Statues of Louis Hébert, Marie Rollet, and their children are prominent in Parc Montmorency overlooking the St. Lawrence River in Quebec City.

Il est surtout connu comme étant le premier colon à s'être installé en Nouvelle-France. Fils d'apothicaire et provenant d'une grande famille en lien avec la profession, il entreprend des études pour une durée de cinq ans afin de pratiquer le même métier que son père en 1595. Il effectue entre 1606 et 1613 deux longs séjours en Acadie où ses connaissances et ses bonnes relations avec les Amérindiens lui permettent de procéder à un large inventaire des plantes de la région. En 1617, il effectue un troisième voyage vers le Nouveau Monde pour s'installer cette fois dans la région de Québec sur l'invitation de Samuel de Champlain. S'étant construit une demeure en pierres, il vit de l'agriculture et en profite pour étudier les différents végétaux sur le territoire. Louis Hébert est nommé trois ans plus tard procureur du roi où il a pour charge l'administration de la justice. Il obtient en 1623 d'Henri II de Montmorency des terres en partage avec la Compagnie de Jésus à Sault-au-Matelot près de Québec. Mais ce n'est que quelques années plus tard qu'il est élevé au rang de seigneur où la seigneurie de Notre-Dame-des-Anges lui est concédée en partage avec les pères jésuites, à proximité de Québec. Il meurt le 25 janvier 1627 des suites d'une chute sur la glace. Son corps est inhumé au cimetière des récollets à Québec. Occupant une place notable dans l'histoire de la Nouvelle-France et la mémoire collective québécoise, on le qualifie de premier agriculteur ou encore, d'« Abraham de la colonie » puisqu'il est le premier à s'installer définitivement et durablement à Québec à partir de 1617. Après son installation dans la région avec sa famille jusqu'à son décès, Louis Hébert aurait expédié à Paris un grand nombre de plantes provenant des espaces fréquentés par les Français en Amérique du Nord. Son legs est également considéré comme important en termes de descendants puisque de nombreux Québécois sont des progénitures lointaines de sa personne sans pour autant porter son nom. (fr)

In 1606, he accompanied his cousin-in-law, Jean de Biencourt de Poutrincourt et de Saint-Just, to Acadia, along with Samuel Champlain. He lived at Port-Royal (now Annapolis, in southern Nova Scotia) from 1606 to 1607 and from 1611 to 1613 when Port-Royal was destroyed by the English deputy governor of Virginia Samuel Argall. In 1617, with his wife, Marie Rollet, and their three children– Guillaume, aged three; Guillaumette, aged nine; and Anne, aged 14 – he left Paris forever to live in Quebec City. He died there 10 years later because of an injury that occurred when he fell on a patch of ice. Hébert, in viaggio assieme alla spedizione di Samuel de Champlain, arrivò in per la prima volta nell'estate del 1606 e poi, dopo una seconda spedizione, nel 1610. Come farmacista, Hébert curò sia i francesi che gli amerindiani. Dopo la distruzione di Port-Royal da parte degli inglesi, Hébert dovette tornare nuovamente a Parigi. Nell'inverno 1616-17 Hébert si ritrovò con Champlain il quale stava cercando di essere aiutato per promuovere la colonizzazione del Québec. Questo avamposto, che era sopravvissuto per circa una decina di anni, sembrava per Hébert un buon posto per fondare una colonia. Hébert ottenne da Champlain un favorevole contratto sul commercio di pellicce. Così, dopo aver venduto la sua casa di Parigi, insieme alla moglie Marie Rollet e ai tre figli, Anne, Guillemette e Guillaume si imbarcò sulla nave Honfleur. Negli anni successivi la famiglia di Hébert riuscì ad impiantare una fattoria dove si produceva granaglie.
