Siden midten av 80-tallet har hun illustrert en rekke bøker, mellom annet Julemysteriet av Jostein Gaarder, og ei bok om Buddha sitt tidligere liv skrevet av Tor Åge Bringsværd. Den siste er òg utgitt på tysk. Ulveungen Sim: Fortellinger om verden utenfor, 2006, har hun illustrert og skrevet selv. Boken ble innkjøpt av Kulturrådet sin innkjøpsordning, ble tildelt Diplom i Årets Vakreste Bøker, 2007, og utgitt på tysk og dansk. Stella East har òg arbeid med offentlige utsmykkingsoppdrag, har hatt flere utstillinger og har mottatt flere priser og stipend. Stella Easts bilder er preget av glødende farger, tydelige detaljer og en myk og malerisk naturalisme. Motivene har ofte et anstrøk av surrealisme med dekorative og symbolske elementer.
