Den ble grunnlagt i 1926 av biskop Augustinus Kilian av Limburg under navnet Philosophisch-Theologische Lehranstalt Sankt Georgen. Prosjektet ble særlig støttet av den pavelige nuntius til Tyskland Eugenio Pacelli, som tenkte seg et sentrum for skolastisk teologi i det tyskspråklige området. Høyskolen lå av politiske grunner frem til 1942 i Valkenburg i Nederland. Her studerte den kjente pater Alfred Delp S.J. ; han ble den 2. februar 1945 henrettet i Berlin-Plötzensee. Høyskolen holdt fra 1945 til 1950 til i Büren i Westfalen. Siden 1950 har den ligget i idylliske Frankfurt-Sachsenhausen. Høyskolen finansieres idag for en stor del av bispedømmene Limburg, Osnabrück, Hildesheim og erkebispedømmet Hamburg, som sender sine prestestudenter til Frankfurt. I sommersemesteret 2005 fantes det ved St. Georgen 426 studenter i filosofi og teologi. 235 studerte for diplom eller på postgradualt nivå, 21 unge menn ville bli prester og 190 var gjestestudenter. I annen halvdel av 1900-tallet fikk en rekke skandinaver sin prestelige formasjon og utdannelse ved presteseminaret og høyskolen.
