The band's name is Spanish for French fries, and is also a pun on the phrase Pop Has Freed Us, which is also the title of their 2003 retrospective album. During their formative years the band performed for fun around Tufts University while they attended as undergraduates.

They were eventually picked up by Sunday Driver records and soon released a 7-inch EP titled Friday night. Their EP received some radio play which prompted Minty Fresh to release an eight-track studio album, Hi-Tech City. The following year saw the release of their first full-length, the self-titled Papas Fritas. The band spent the rest of the year and most of 1996 touring in Europe and Asia. Two additional members joined in 2000, before touring to support their LP Buildings and Grounds. While not officially active, members still live in the Boston area and have been known to perform on occasion.

Shivika Asthana chante parfois seule, tout en jouant de la batterie. Son jeu est assez caractéristique: simple, sec et direct, étant donné qu'elle a débuté la batterie en formant le groupe. A cela s'ajoute une voix enjouée, ce qui donne à la musique des Papas Fritas une certaine fraîcheur.
