Melissopalynology is the study of honey. By extension, it also includes the study of any pollen contained in honey as well as the pollen's source. By studying the pollen in a sample of honey, it is possible to gain evidence of the geographical location and genus of the plants that the honey bees visited, although honey may also contain airborne pollens from anemophilous plants, spores, and dust due to attraction by the electrostatic charge of bees.

Generally, melissopalynology is used to combat fraud and inaccurate labelling of honey. Information gained from the study of a given sample of honey (and pollen) is useful when substantiating claims of a particular source for the sample. Monofloral honey derived from one particular source plant may be more valuable than honey derived from many types of plants. The price of honey also varies according to the region from which it originates.
  • Melissopalynologie ist die Untersuchung von Honig und den darin enthaltenen Pollen. Im weiteren Sinne beinhaltet sie auch die Untersuchung der Herkunft dieser Pollen. Durch Analysieren der Pollen in einer Honigprobe ist es möglich das geografische Herkunftsgebiet und die dort vorkommenden Pflanzen, die von den Bienen besucht wurden, zu bestimmen. Die Pollenanalyse erfolgt durch Mikroskopie des durch Zentrifugation gewonnenen Sediments der Festkörper, die sich in einer wässrigen Honiglösung befinden. Für eine erste Übersicht genügt nach adäquater Präparation des Sediments häufig eine 160fache Vergrößerung. Detaillierte Aussagen erfordern jedoch bis zu 450fache Vergrößerungen. Ein Standardwerk der Pollenanalyse wurde bereits 1935 von E. Zander, seinerzeit Direktor der Bayerischen Landesanstalt für Bienenzucht in Erlangen, herausgegeben. Diese Information wird für den Nachweis einer bestimmten Herkunft eines bestimmten Honigs benötigt. Honig von einer einzigen Pflanzenart ist oft wertvoller als Honig, der aus Nektar verschiedener Pflanzenarten gesammelt wurde. Auch die Herkunftsregion beeinflusst den Verkaufspreis. Importhonige sind meist preiswerter als heimische Honige. Melissopalynologie dient also dem Aufspüren illegalen Umetikettierens bzw. falscher Herkunftsangaben. Seit 2004 ist die Melissopalynologie nicht mehr zur Herkunftsbestimmung auf alle Honige anwendbar, da auch ein so genannter "Gefilterter Honig" zum Verkauf angeboten werden darf, siehe Honigverordnung. Hierbei handelt es sich fast ausschließlich um Importe großer Vermarkter, die durch die Filterung eine frühzeitige Kristallisation von flüssig angebotenem Honig ("Honig in der Ketchupflasche") verhindern wollen.

Sus dos objetivos mayores son la ubicación geográfica de las mieles y la identificación de los tipos, esto últimos se basan en la presencia significativa de determinado tipo de grano de polen, v.g. ulmo. Como el filtrado está permitido, este método no permite determinar el origen botánico. En tal caso se emplean métodos físico-químicos, incluyendo quimiometría de parámetros usuales, análisis sensorial, que puede ser optimizado con compuestos de referencia; análisis de compuestos volátiles (con o sin SPME). En el actual estado del arte una combinación de métodos físico-químicos, palinológicos y análisis sensorial permite una completa determinación del producto. Sin embargo la decisión de pureza monofloral se hace mediante métodos organolépticos.

In tempi recenti ha assunto notevole importanza per permettere l'identificazione di frodi alimentari basate sulla falsa dichiarazione della composizione del miele. Inoltre le moderne mappe dei pollini nei mieli permettono di identificare il luogo di origine del prodotto principe delle api.
