Fill d'un barber, Gelbart es va iniciar en el món de l'espectacle als 16 anys quan va començar a treballar per una ràdio de Los Àngeles durant la Segona Guerra Mundial. Gelbart escrivia guions per l'humorista Danny Thomas i més tard per el show Duffy's tavern.
