Im Club wurde ursprünglich improvisierte Musik und Jazz zusammen mit Tanz, Filmen, Theater und Lyrik aufgeführt. Als erste Jazzmusiker spielte dort 1987 das Trio von Wayne Horvitz und bald darauf John Zorn (der ab 1989 mit seinem Projekt Naked City regelmäßig dort auftrat). Aufnahmen der Reihe „Live at the Knitting Factory“ erschienen 1989/90 beim Musiklabel A&M Records. Um mehr Aufmerksamkeit zu erreichen, veranstaltete die Knitting Factory 1988 ein erstes eigenes kleines Festival mit ihren Musikern – zur selben Zeit wie das JVC Jazz Festival – von dem sie im selben Jahr einen Ableger in den Niederlanden („Knitting Factory Festival“) veranstalteten. Im selben Jahr traten sie mit ihren Knitting-Factory-Musikern in Zusammenarbeit mit George Wein auch in der Upper West Side im Lincoln Center auf und unternahmen 1990 erstmals eine Europa-Tournee (unter anderem nach Deutschland, inklusive Ost-Berlin) sowie 1991 eine erste Tournee an die Westküste der USA. In der Knitting Factory traten unter anderem Cassandra Wilson, Sonny Sharrock, Sonic Youth, Lou Reed, Cecil Taylor, Fred Frith, Defunkt, Charlie Haden und Bill Frisell auf. Von 1987 bis 1994 war der Club in der 47 E. Houston Street ansässig. Heute befindet er sich in der 74 Leonard Street zwischen Church Street und Broadway. Es gibt drei Bühnen: „Mainspace“ für die Haupt-Konzerte, „Tab Bar“ und „Afterknit“. 2007 ging die Knitting Factory mit dem Radiosender XMU einen Exklusivvertrag für die Ausstrahlung von Konzerten ein. Michael Dorf war zuvor Manager des Plattenlabels Flaming Pie Records der Band Swamp Thing (mit Gitarrist Bob Appel) in Madison, Wisconsin. Er ist seit seinem Erfolg mit der Knitting Factory seit den 1990er-Jahren auch ein bedeutender Festival-Produzent in New York (unter anderem des New York Jazz Festival, des New York Jewish Musical and Heritage Festival sowie des Music meets Technology Festivals von Intel und Apple).
