Vuosina 1966 – 1968 hän soitti yhtyeessä American Blues. Vuonna 1969 hän perusti ZZ Topin yhdessä American Bluesista tutun Frank Beardin sekä Moving Sidewalks- yhtyeen kitaristi-laulajan Billy Gibbonsin kanssa. Yhtye soitti aktiivisesti vuoteen 1977 asti, ja piti sen jälkeen kahden ja puolen vuoden tauon, jonka aikana Hill ja Gibbons toisistaan tietämättä kasvattivat pitkät parrat.
