- Cora is a Canadian chain of informal restaurants serving breakfast and lunch. Until 2008, the chain was known as Chez Cora déjeuners... in Quebec, and Cora's Breakfast and Lunch elsewhere in Canada. The sunshine logo is representive of the good morning (or early afternoon) that is supposed to come from every breakfast or lunch item served at each of their franchise locations from Alberta to Nova Scotia (no franchises are currently found in British Columbia but franchising is available as long as people are willing to travel to their Montreal headquarters). Chez Cora began in 1987 when Cora Tsouflidou opened a snack bar in Montreal, Quebec, Canada. Now, it has grown to a chain of more than 50 franchises in Quebec, and 89 across Canada. Their menu includes the famous Eggs Ben et Dictine, and the Construction (Workers') Plate which features a meal fit for a construction worker. Several things on their menu sound outdated like their 1990s Harvest (refering the the economic boom enjoyed in Canada during much of that decade) and their July 89 (possibly refering to the 200th anniversary of the French Revolution) items. Various items that combine fruit, meat, and eggs help to create a breakfast or lunch that conforms to all four of the food groups on Canada's Food Guide. Cora is considered to be the prototype of the health-oriented restaurant that can commonly be seen in today's food courts and in certain food items at Subway.
