Il a commencé avec André Téchiné et a été, aux côtés de sa collaboratrice Christine Gozlan, le producteur de plus de 200 films avec nombre de metteurs en scène tels que Jean-Luc Godard, Jacques Doillon, Bertrand Tavernier, Claude Sautet, Roman Polanski, Nicole Garcia, Coline Serreau, Alain Corneau, Bertrand Blier, Philippe Garrel, Xavier Beauvois, Arnaud Desplechin etc. Ses dernières productions sont le fruit de collaborations avec Amos Kollek, Mike Leigh, Emir Kusturica et David Lynch. Fondateur des structures Sara Films puis Les Films Alain Sarde, il est désormais producteur indépendant. Son frère est le compositeur Philippe Sarde. Il est le fils du grand mezzo-soprano Andrée Gabriel (Saada) de l'Opéra de Paris
